Energizing Sprout and Wild Herb Salad

This salad is so rich in antioxidants, freshness, vitality & fuel for your body's cells that you just have to try it! After eating it, you will have strength for hours of sports, games & fun (or exciting work)!

 

Ingredients:

  • Purple radish sprouts
  • Mountain lentil sprouts
  • Goutweed
  • Stinging Nettle
  • Chickweed
  • Dandelion

 

For the dressing:

  • Olive oil
  • Lemon juice or orange juice (freshly squeezed)
  • Herbs
  • 1 tsp mustard
  • possibly a dash of agave syrup

Method:

The wild herbs can be finely or coarsely chopped, this way they are easier to chew and digest. Then spread a handful of radish sprouts around the wild herbs, drizzle with dressing and garnish generously with lentil sprouts.

The mountain lentil sprouts add that extra serving of plant-based protein and are super nutritious and filling when eaten raw. The lentils are better raw, that is, uncooked. (Of course, you may steam the lentils briefly if you prefer).
